Serve these juicy chicken koftas in a pita bread piled high with tzatziki and tomato and cucumber salad.

The ingredient of Chicken koftas

  1. 1 tablespoon extra virgin olive oil
  2. 1 brown onion, chopped
  3. 1 garlic clove, crushed
  4. 1/4 cup (40g) Lucky pine nuts, finely chopped
  5. 2 teaspoons ground cumin
  6. 500g chicken mince
  7. 1 egg, lightly whisked
  8. 1/2 cup (100g) couscous
  9. Pita bread, to serve
  10. 1 punnet cherry tomatoes, quartered
  11. 2 Lebanese cucumbers, seeds removed, chopped
  12. 1/4 cup fresh mint leaves
  13. 1 tablespoon extra virgin olive oil
  14. 2 teaspoons fresh lemon juice
  15. Salt & freshly ground pepper
  16. Tzatziki, to serve

The instruction how to make Chicken koftas

  1. Heat the oil in a frying pan over a medium heat. Add the onion, garlic, pine nuts and cumin. Cook for 8-9 minutes or until soft. Cool slightly.
  2. Combine the chicken mince, egg, couscous and onion mixture in a bowl. Season. Divide into 16 even portions. Shape each portion into a 7-8cm long sausage shape. Refrigerate for 30 minutes.
  3. Thread the sausages onto skewers. Cook, turning, until cooked through. Serve with the salad, tzatziki and bread.
